Tierney's Sweet Potato Soup
I was so glad we had little cups to taste this yummy concoction of Tierney's as well as the other soups on the night of our recipe swap. I may or may not have refilled my little cup a few times...
Sweet Potato Soup

Ingredients
3 large or 4 small sweet potatoes or yams
1 can coconut milk (I use "Thai Kitchen" brand)
1/4 t. thyme, or to taste
sea salt & pepper to taste
Directions
Wash, pierce, and bake sweet potatoes with skin in a 400 degree oven for 70-90 minutes, or until soft all the way through. Remove skin and throw all the ingredients into the blender. Puree until smooth.
Top with cheese and/or bacon, unless you want it vegan or vegetarian.
